About This Recipe
This House Special is a signature recipe from the local eatery Tiny Cake Bakery.
" The cheesecake has the old-fashioned taste of a southern sweet potato pie with all the warm spices and fresh sweet potatoes, with the silky creaminess of the cheesecake filling, and the graham cracker crust that gives it texture of pie crust. I usually make it during the Fall season and for Thanksgiving. It's a special dessert because it's not made often and has a lot of ingredients.
Learning how to cook and bake at the age of 5 from my mother, who was a Chef at the time is definitely a core childhood memory. The women on my mother's side are amazing cooks, and a lot of the recipes have been passed down for generations. Cheesecake is also my favorite dessert and was one of the first desserts I learned how to make on my own. My family always prepared cheesecake for Thanksgiving and Christmas."

Step 1: Bake sweet potatoes for 1 to 1 1/2 hrs. Use a hand mixer or stand mixer to combine all sweet potato mixer ingredients. Place mixture to the side in a separate bowl.

Step 2: In a bowl mix crushed graham crackers, sugar, cinnamon, and melted butter. Mix together. Press mixture into spring pan. Bake at 325 degrees for 5-7 minutes. Cool.

Step 3: Put cream cheese in a mixing bowl and cream until smooth. Add sugar and cream together. Then add sour cream, eggs, vanilla, and lemon juice. Mix until smooth.

Step 4: Place half the sweet potato mixture on top of the crust in a smooth layer. Then pour the cheesecake on top of the sweet potato mixture.

Step 5: Take the remaining sweet potato mixture and place dollops throughout the top of the cream cheese mixture. Take a knife and swirl the mixture.

Step 6: Preheat the oven to 325 degrees. Place the cheesecake in the oven. Place a water bath on the shelf below.

Step 7: Bake for 50 minutes or until the cheesecake slightly giggles in the middle. Let the cheesecake cool in the oven for 30 minutes with the oven door cracked. This step prevents the cheesecake from cracking.
