Steps

Step 1: Bake sweet potatoes for 1 to 1 1/2 hrs. Use a hand mixer or stand mixer to combine all sweet potato mixer ingredients. Place mixture to the side in a separate bowl.

Step 2: In a bowl mix crushed graham crackers, sugar, cinnamon, and melted butter. Mix together. Press mixture into spring pan. Bake at 325 degrees for 5-7 minutes. Cool.

Step 3: Put cream cheese in a mixing bowl and cream until smooth. Add sugar and cream together. Then add sour cream, eggs, vanilla, and lemon juice. Mix until smooth.

Step 4: Place half the sweet potato mixture on top of the crust in a smooth layer. Then pour the cheesecake on top of the sweet potato mixture.

Step 5: Take the remaining sweet potato mixture and place dollops throughout the top of the cream cheese mixture. Take a knife and swirl the mixture.

Step 6: Preheat the oven to 325 degrees. Place the cheesecake in the oven. Place a water bath on the shelf below.

Step 7: Bake for 50 minutes or until the cheesecake slightly giggles in the middle. Let the cheesecake cool in the oven for 30 minutes with the oven door cracked. This step prevents the cheesecake from cracking.

Step 8: Chill for 4-6 hours
