Brush chicken breasts with about 2 tablespoon olive oil and season with salt and pepper.

In a large skillet over medium-high heat, add 2 tablespoon olive oil. Add chicken and cook about 3-5 minutes on each side, until an internal temperature reaches 165°F. Remove.

Add remaining 2 tablespoon olive oil and shallot to skillet. Cook over medium heat until softened. Stir in cheese and broth. Stir and cook until creamy. Add parsley and chives.

Spoon sauce over chicken and serve with desired steamed vegetables. Refrigerate leftovers.
