Pat chicken dry and cut into cubes

Heat olive oil in large deep skillet over medium-high heat. Add chicken, salt, pepper, Italian seasoning, and garlic. Sauté for 2-3 mins until edges of chicken start to cook.

Add sun-dried tomatoes and cook for 3-4 more mins.

Add orzo and broth and stir well. Then reduce heat to medium, cover, and cook for 12 mins. Stirring occasionally.

Once orzo is cooked to desired texture add milk and spinach. Stir until spinach is wilted.

Add Parmesan cheese, stir until melted then remove from heat.

Notes

I used season salt instead of kosher. I also measured the seasonings with my heart. The original instruction had you cook the chicken bars then add the seasonings with the tomatoes.

I also used dry sun-dried tomatoes because the ones in olive oil looked gross.

I also threw the mushrooms in. Those were not in the original recipe.
