Prep CrockPot/InstaPot & Veggies: Start by adding the liquid to your pot.

Chop up and add to the pot any veggies you want cooked with your roast (Potatoes, Onions, Bell Peppers, etc) -Really any veggie would go good here if you want it to soften with the meat juices)

If you are using an InstaPot, turn it on to sear now. This will help heat the liquids faster and start pressure cooking sooner!

Prep Meat: On a clean surface, open your chuck roast and pat dry.

Season each side of your chuck roast with the Dan-o's Chipotle seasoning.

On a medium-high skillet, sear each side of the roast. It should be dark brown, nearly black - Watch your nose, the smoke as it sears will getch-ya!
Don't forget the sides of the roast!
Do this in batches if your roast came in multiple pieces.

Once all sides of the roast is seared, add it to the pot.

Add the pepperchinni's over the meat in the pot.

Add the chipotle peppers or sauce on top.
- If you are using whole chipotle peppers, feel free to use less if you don't want it as spicy. The chipotle salsa/sauce I use works great as it's not too spicy, and mixes well with the other liquids.

In a Pressure Cooker:
- Seal the pressure and cook on high pressure for 90 minutes.
I use the meat/beef option on mine. The one I have does not have a high-medium-low setting.

In a Crock Pot:
- Cover the pot and cook on high for 5-8 hours, or until the meat is
tender!

Shred Beef:
Once the beef is finished cooking, remove it and shred as you like. It should shred with a fork easily - or fall apart in your hands.

Sandwiches:
-For my sandwiches, I use thick (Texas) toast, sliced red onion, sharp cheddar cheese(more than you think you need), and horseradish sauce(recipe coming soon). Assemble the sandwich with the beef, and cook like a grilled cheese.
I put a light amount of the horseradish sauce on both pieces. Then butter the upper side of the bread/sandwich -> Place that piece down first on the griddle/skillet, then butter the other side of the sandwich.

-You can also use hoagie/sub buns. Sub mozzarella cheese or whatever cheese you like.
-Top with what you like, use the pepperchinni's. (Squeeze the stem and seeds out after they cook - it'll come right out)
