Slice chicken breasts into burger size fillets. Season with salt, pepper, garlic and onion powder.

On a separate plate, add crushed cornflakes. In another bowl, whisk 1-2 eggs.

Dip chicken pieces in the egg wash, then onto the crushed cornflakes, ensuring each piece is well coated. Place on a baking tray.

Spray with cooking spray and cook in an oven for 12-14 minutes at 200°C, or in an air fryer.

Meanwhile, make the glaze: combine orange juice, soy sauce, honey, sriracha, and orange zest in a pan. Bring to a boil, then add the cornflour slurry and simmer for 5 minutes until slightly thickened and darker.

Make the slaw: in a bowl, combine thinly cut cabbage, sliced red onion, grated carrots, green onion, light soy sauce, and rice vinegar. Mix and let the flavors infuse.

Once the chicken is cooked, coat with the glaze using a brush or spoon. Assemble the sandwich: spread spicy mayo on the bun, layer with crispy chicken, slaw, tomato, sesame seeds, and top bun. ENJOY!
