1. Prepare everything first.
Stir-frying happens quickly, so have all the vegetables sliced and the sauce mixed before you start cooking.

2. Cook the beef.
Heat a large wok or frying pan over medium-high heat.
Add about ½ tbsp olive oil.
Add the beef strips, garlic and black pepper. Stir-fry for approximately 2–3 minutes, just until browned.

Add the zucchini and capsicum and stir-fry for another 2–3 minutes.

Add the olives at the end if you’re using them.
Taste before adding any salt — the soy sauce and olives already provide quite a bit.
