Whisk together vinegar, hoisin sauce, canola oil, sesame oil and 1 tsp. salt.

Place 1/2 cup of the hoisin mixture in a bowl; refrigerate remaining sauce.

Add chicken and remaining 2 teaspoon salt to the bowl and toss to coat. Chicken can be cooked immediately or marinated for up to 4 hours.

Heat grill to medium heat.

Place noodles in a large bowl and cover with boiling water. Let stand 10-12 minutes until tender; drain and rinse with cool water.

Oil grill grates. Grill chicken 12-14 minutes, turning once, until the internal temperature reaches 165°F. Allow the chicken to rest for 5 minutes.

Meanwhile, toss cooled noodles, peppers, peas, carrots, and green onion with desired amount of reserved hoisin mixture. Top with sliced grilled chicken.

Refrigerate leftovers.
Notes
Tip: For meal prep keep the hoisin dressing on the side until serving.
