This Mexican lasagna enchilada stack is a flavorful and hearty dish made with layers of tortillas, shredded pork carnitas, corn, black beans, diced red capsicum, enchilada sauce, and melted mozzarella cheese. It's a delicious twist on traditional lasagna with a Mexican flair. Garnish with fresh parsley or coriander for added freshness.

Notes
1. You can substitute the Pork Carnitas with any shredded or diced (cooked) chicken, beef or pork. If the meat is not flavoured, I recommend sprinkling some spices on the meat before mixing with the other ingredients: 1/2 tsp cumin powder, 1/2 tsp paprika, 1/2 tsp dried oregano, pinch of chilli powder (optional), salt and pepper.
