Tenderise the chicken breasts for even thickness then cut in halves.

Season both sides with salt, paprika, garlic powder and chilli powder. Prepare the breading stations.

Dip the chicken fillets into the egg wash and coat with the crumbs, ensuring every part is covered. Arrange on a tray, spray with cooking spray, then bake for 20 mins at 200°C.

In the meantime, mix shredded red cabbage, carrots and cucumber in a bowl with light mayo and pepper. Place the cucumber in a separate bowl with the other ingredients and mix.

In a small pot on low heat, add all ingredients for the glaze, bringing to a light bubble for a couple of minutes to thicken.

Once the chicken is done, coat with the glaze, get toasted brioche buns, add the slaw, pickled cucumbers, crispy chicken, sprinkle sesame seeds, then enjoy!
