INGREDIENTS

1 1/2 cups fine- or medium-grind cornmeal

1/2 cup cassava flour

1 1/2 teaspoons kosher salt

1 1/2 teaspoons baking powder

1/2 teaspoon baking soda

1/2 teaspoon granulated sugar (optional)

2 tbsp minced dried onion

1 large egg

1 cup buttermilk

whisk together ingredients

let stand a few minutes

heat oil to cook them in

use small cookie scoop to gently drop them into hot oil

turn if they don't flip on their own.

remove to paper towel lined plate.
