Slice your chicken breasts into thinner fillets. Season both sides evenly with the spices listed, lemon juice and olive oil. Set aside then thinly slice the onions and bell peppers.

Make the green sauce by adding all the ingredients in a blender cup. Blend till smooth and adjust taste to your preference.

Get a pan on medium heat, add cooking spray then cook the chicken for 3-4 mins each side to get a nice crust

Set the chicken aside, in the same pan add the sliced onions and bell peppers. Cook for 3-4 mins then add washed uncooked rice with the spices listed. Mix and toast for 2 mins.

Next add water and bring to a light bubble then cover the pan and simmer for 8-10 mins on low heat till fully cooked and fluffy.

Slice the chicken into thin strips, serve on top of the rice with the creamy green sauce and ENJOY!
