Steps

1
Cook the Pasta:
• Bring a pot of salted water to a boil and cook the pasta according to package instructions. Reserve ½ cup of pasta water before draining, then set the pasta aside.
2
Prepare the Vegetables:
• While the pasta is cooking, chop your vegetables into bite-sized pieces. If using frozen vegetables, thaw them beforehand.
3
Sauté the Garlic and Vegetables:
• Heat olive oil or butter in a large skillet over medium heat.
• Add minced garlic and sauté for 30 seconds until fragrant.
• Toss in the vegetables and cook for 4–5 minutes, stirring occasionally, until tender.
4
Make the Creamy Sauce:
• Reduce the heat to low. Add the cream cheese to the skillet with the vegetables. Stir until it begins to melt and form a creamy base.
• Gradually add a few tablespoons of the reserved pasta water to loosen the sauce and make it smooth. You may not need the full ½ cup.
• Season with oregano, salt, and pepper to taste.
5
Combine Pasta and Sauce:
• Add the cooked pasta to the skillet and toss to coat it in the creamy sauce. Cook for 1–2 minutes, letting the flavors meld together.
6
Serve:
• Transfer to plates and sprinkle with optional toppings like grated Parmesan or chili flakes. Serve warm and enjoy!
