Peel and cook potatoes. Let cool, then grate into cold water. Dry with paper towels.

Combine all sauce ingredients into large pot. Slowly bring to heat and mix until all cheese is melted. Mix the potatoes.

Spread potato cheese mixture in baking dish.

Melt the butter and mix with honey bunches of oats. Spread over the top of the casserole.

Bake in oven @350°F for 1 hour, covered.
