In a large bowl, combine the ground pork, kosher salt, black pepper, nutmeg, all spice, milk, bread crumbs, egg, cayenne pepper, and finely minced onion. Mix gently with your hands until just combined, being careful not to overmix.

Roll the mixture into 1-inch meatballs. You should have about 30-35 meatballs.

Heat a large skillet over medium-high heat. Add the meatballs in batches, being careful not to overcrowd the pan. Brown the meatballs on all sides, about 5-7 minutes per batch. Remove the browned meatballs from the skillet and set aside.

Gravy

In the same skillet, reduce the heat to medium. Add the butter and melt it. Whisk in the flour and cook for 1-2 minutes, stirring constantly, until lightly golden.

Gradually whisk in 2 cups of water, ensuring no lumps form. Bring the mixture to a simmer, stirring constantly.

Stir in the salt, black pepper, and beef bullion. Continue to simmer and stir until the gravy thickens, about 3-5 minutes.

Reduce the heat to low. Stir in the heavy cream and return the browned meatballs to the skillet. Simmer gently for 10-15 minutes, or until the meatballs are cooked through and the gravy is rich and velvety. Serve hot over egg noodles.
